Fibrous Texture - A New Approach to Frozen Desserts

Sol-ice No Added Sugar is an innovative ice cream based on rich fibre while maintaining a fully dairy profile. While not a traditional soft-serve, it delivers a fibrous texture along with a rich creaminess that you won't find anywhere else.

Directions

With electric mixer:

Pour the semi-skimmed milk into a mixing container. Add the ice cream powder gradually and in small increments, while simultaneously whisking for 6-7 min. Freeze the mixture for 1 hour to help enhance and harmonise the ingredients. Remove the bowl from the freezer and whip for a further 3-4 mins at maximum speed. Without delay, put it back in the freezer for 6-8 hours or until it is frozen.

With ice cream machine:
Pour the semi-skimmed milk into a mixing container. Add the ice cream powder gradually and in small increments, while simultaneously whisking for 6-7 min. Place in the ice cream machine and follow operating instructions
Ratio & Tips:
1 powder to 1.35 milk ratio, which means for every 1kg of Sol-ice powder use 1.35kg of whole or semi-skimmed milk. Consider using an electric hand blender for the first whisk if available. This will help the powder dissolve more effectively. For the second round, give some volume using a high-speed electric mixer. In the final step you can either store the entire mix, or divide into smaller containers, which should be placed in the freezer first before adding the ice cream, to ensure even freezing. Containers should be covered to prevent drying. Serve at a suggested temperature of -10C or let it sit at room temperature for a few minutes. If using an ice cream roll pan, simply skip step 5 and apply the mixture directly on the frozen plate.
