Le Pere Eugene is produced by Le Grand Lejon, a producer based on the picturesque Brittany coast in the port of Binic. Saffron adds a lot of flavour and colour to this spicy and garlicky rouille sauce. Rouille works perfectly with chargrilled swordfish, sturgeon, or sea bass, as well as cold steamed shrimp and any fried fish or seafood. Rouille is most commonly associated with bouillabaisse, a typical Provencal fish stew. For a true taste of Provence, spread rouille over toasted bread and serve on top of the stew.
