Product Description

Italian tagliolini, extra thin durum wheat egg pasta. This product has 3 basic elements. Flour: only durum wheat semolina; eggs: fresh, seven per kg of semolina (25%); processing: careful not to heat the dough and at the same time exuberant in the number of passages. Pasta made this way, dried over long periods of time and at a low temperature, gives rise to an inimitable product with a moisture content of only 7%. The manufacturing process is unique: the special feature is a machine sheeter, designed by Arrigo Cipriani, which allows the dough sheet to be worked more than thirty times simulating the manual work of the rolling pin, in so as to obtain, after rolling, an extremely elastic and thin dough of only 0.6 millimetres. Directions

Boil the tagliolini in boiling water for about 3-4 minutes until al dente. Serve them with melted butter and fresh herbs.
