Directions

Rinse lentils under cold water. Pick over lentils to remove debris or stones. Soaking is optional but can reduce cooking time by about half. If soaking, cover lentils with plenty of water, let them soak for at least 4 hours or overnight, then drain and rinse before cooking. For cooking, use a ratio of 3 cups of liquid (water, stock, etc.) to 1 cup of lentils. Bring liquid to a boil, then reduce heat, cover, and simmer until lentils are tender (about 45 minutes for green lentils). Drain lentils once cooked.
