These rich, nutty and melt-in-the-mouth Iberico ham slices come from premium Jabugo Iberico pigs raised in Spain Jabugo is a small mountain town in Andalucia, high in the Sierra de Huelva and internationally recognised as the cradle of the finest Iberico hams and charcuterie. Its unique altitude and microclimate with cold northerly winter winds and gentle summer temperatures create the perfect natural conditions for the slow curing of Iberico meats following the rhythm of the seasons. During the autumn Montanera season, the Iberico pigs roam freely through the oak forests of Extremadura, feeding naturally on fallen acorns. This acorn-rich diet allows healthy oleic acid the same beneficial fat found in olive oil to infiltrate the meat, creating the famous: Rich nutty flavour Delicate marbling Silky texture Melt-in-the-mouth finish To produce this exceptional ham, each whole leg is first salted for several weeks before being washed and slowly air-cured in the fresh mountain air for a minimum of 36 months. The ham is then expertly carved into very thin slices to maximise flavour and texture. For the best experience, allow the ham to reach room temperature before serving so its aromas and delicate flavours can fully develop.
