DO NOT ORDER IF YOU MUST RECEIVE FROZEN BERGAMOT - Citrus bergamia, more commonly known as bergamot orange, are wonderful fruits! A fragrant citrus fruit the size of an orange, bergamots are hybrid fruits that derive their name from the Italian city of Bergamo. Bergamots have glossy, smooth skin that is delightfully aromatic and shifts from green to bright yellow as the fruit ripens. Beneath the rind is soft, pale, sour yellow flesh that is divided into approximately 10 segments and is intensely fragrant and juicy. However, although the flesh of the bergamot is edible, the fruits are most often used for the juice extracted from the flesh. The juice has an acidic, tart taste comparable to other citrus fruits, but is notably less sour than lemon (although they are more bitter than grapefruit). The juice is most commonly used to add a kick of citrus flavour to a variety of food and drink recipes. The rind and zest are often used to make syrups, cocktails and jams, with its use in marmalade-making being particularly pronounced in Italy. Bergamots work well with other citrus fruits, and pair successfully with seafood, ricotta, avocado, and fresh herbs. For those with a sweet tooth, bergamot is ideal for bringing a touch of exotic flavour to your favourite recipes for baked goods such as cookies and cakes. In Bergamo, the oil extracted from the rind is used in perfumes, colognes, teas, and confectionaries - the essence is used to flavour a variety of items, from Earl Grey tea to Turkish delight! As well as being extremely versatile in their culinary uses, bergamot boasts a range of nutritional benefits: they are an excellent source of vitamin C and potassium, and are rich in vitamins B1, B2 and A.
